Mafafas is a small highland community located 1,350 meters above sea level. The town is made up of tiny ejidos—villages of just 30–50 people—surrounded by misty hills and coffee farms. Despite its remote setting (a 3.5-hour drive from Veracruz City), Mafafas has long been known for its dedication to coffee. Its farms average between 3–6 hectares, and while coffee remains a tradition, recent years have seen some farmers turn to livestock after severe frosts damaged many coffee plants.

Mafafas’s unique microclimate—where warm and cold winds can shift within minutes—shapes its farming practices. Lower farms (1350–1500 masl) use the ice-cream bean tree for shade and rely on mixed fertilizers, while higher farms (1500–1800 masl) favor oak and pine canopies and organic composts. After harvest, cherries are transported to the central processing plant in Coatepec, where they’re washed with spring water, fermented for 48 hours, and gently dried for 60 hours—capturing the resilience and character of Mafafas in every cup.
