From the Mines Gerias region of Brazil comes this winter’s delicious toasty and comforting Brazil. The volcanic process involves fermenting the coffee in “volcanic” like piles for 48 hours, before spreading the coffee in a thin single layer and finalizing the drying process in a mechanical drier.
